Ambition Brownies
What’s better than coffee and chocolate? If you are like us – and have a hard time answering that question . . . then these brownies are for you!
The Bold and Gritty Ambition Brownie is a modern take on the classic brownie with a special coffee chocolate ganache frosting. Featuring our very own Ambition Blend Coffee. Thanks to a wonderful Bold and Gritty customer, @sweettxmd, for this recipe.
Brownies
Ingredients:
1 cup butter - room temperature
2 cups granulated sugar
4 eggs
2 tsp vanilla
2/3 cup cocoa powder
1 cup flour
1/2 tsp salt
1/2 tsp baking powder
1 cup chocolate chunks/chips
Instructions:
Preheat oven to 350 deg Fahrenheit. Mix the dry ingredients: cocoa, flour, salt, and baking powder into a bowl. Into a separate bowl, combine the cream, butter, sugar, eggs, and vanilla together. Next, sift and mix in the dry ingredients and stir in the chocolate chunks. Place in a greased 9x13 pan and cook 20-25 min - do not overcook, center may still “jiggle.” Let the brownies cool completely
Ambition Ganache
Ingredients:
2/3 cup Bold and Gritty Ambition Blend, Whole Bean Coffee
2 cups heavy cream
2 tbsp butter
1-1/2 cups (12oz) white chocolate chips
(Note: You’ll also need a cheesecloth and burr coffee grinder.)
Instructions:
Use a burr grinder to coarsely grind the ambition whole beans to approximately the size of coarse table salt. Next, pour the ground beans and heavy cream into a medium saucepan and brew (simmer) over medium heat, stirring occasionally until the heavy cream becomes lightly brown-tinged in color and gives off strong coffee aromas. Be careful not to bring the mixture to a boil. Remove from the heat and let it completely cool.
While the mixture is cooling, wet the cheesecloth and then squeeze out the excess water. Place the cheesecloth in a strainer over a small saucepan. Pour the mixture into the saucepan, remove the cheesecloth, and discard the residuals
With the brewed heavy cream in a small saucepan, add 2 tbsp of butter and bring the mixture just to the point of boiling, stirring occasionally.
Into a separate medium sized bowl, pour the chocolate chips, followed by the heated brewed heavy cream and butter mixture. Do not stir—let it stand for approximately 1 minute. Then use a whisk to stir and completely melt the chocolate chips into a ganache.
Let the ganache cool until it is thick, yet still fluid. Then pour it over the cooled sheet of brownies. Let the ganache completely set before cutting into squares.
